Gentoo has a package management system that you can tweak for your needs.
By default Gentoo will install a stable version of everything. However, they do include new versions of a lot of software in the portage tree sometimes before it is stable, messing with your use flags can cause you to get the bleeding edge software packages.
I run gentoo on my system at home and it is rock solid. Only problem I ever had was getting OpenOffice to compile.
I agree with jtshaw. I haven't had any problems with stability. I haven't had any x crashes or software problems. THe only problem I've had compiling is with openoffice. It's been much more consistant for me than red hat or suse.
