1. From the menu, click on File.
2. Select Create CD From Disc Image from the drop down menu.
3. On the CD creation Setup window, click the Advanced Button, then choose Disk at Once. If you use Track at once, you'll get an unusable CD.
4. From the File Selection window, change File Type to ISO Image Files.
5. Double click on the .iso file to be burned.
6. Click on the Burn CD icon on the File Menu.
It might not be an issue in the current version of Easy CD Creator. #2 is the main point. The main thing #4 let you do was see the iso file in the file selection window. If you can already see it and select it, then you don't need to fiddle with that option.

I dont know if you finally succeeded, but I have just managed to get a bootable CD working with Roxio Easy CD creator 5.
I unsuccessfully tried to make a bootable CD with floppy and then with no emulation, then I created a CD from the iso image and it worked as a bootable CD
Start Easy CD Creator
File | Record CD from image
Select iso images files (rather than the default .cif files)
locate the knoppix image
Record with the default options (mainly disk at once)
