I use Gentoo Linux, but I have found that running a vnc server with vnc2swf works well.

First you start the VNC server, then you run vnc2swf and have it connect to said server. From there, vnc2swf will record the information that comes over vnc into a flash file.
If you have python you can download and run it from it's web site, or it might be in the Ubuntu repository.
