FYI: LXDE is not the issue, it only provides the desktop on the window. Xorg provides the window on which the desktop is built, and determines the resolution.
It may be that your video card or monitor are being mis-detected, or that you have not loaded a driver that will push them to the resolution you require. Can you provide information on your video controller and monitor, and the drivers loaded for them?
(Check dmesg and your message.log from /var/log for information.)

And can you tell from the logs I asked you to examine WHICH via chrome hcm card you have?
I bet you are getting the generic VESA driver, and that 800x600 is all it offers. There are drivers for the series you have, but the exact chipset is critical. The wrong one will not work, and may cause serious problems.

and that site is generally the best place to get drivers for via hardware.
Once you find the correct card designator, and download and install the proper driver, I suspect that you will find yourself with many more attractive display options.
NOTE: those VIA HCM cards are NOT known for performance. They provide adequate performance for Windows and Office, base DirextX features (at level 9), and should work for Linux, as long as you do not need high-speed graphics features used in games, some kinds of video processing and animation, etc. Compared to some other chipsets this one is rather a dog, but if a good dog is all you need it will serve. It is popular in low performance laptops because due to the lower power requirements.
