I found this on google, not sure if it will work:

Code:
gconftool-2 -t str --set /apps/metacity/global_keybindings/run_command_9 "<Control><Alt>Delete"

gconftool-2 -t str --set /apps/metacity/keybinding_commands/command_9 "gnome-system-monitor"

You can do it graphically.

Go to Applications > System Tools > Configuration Editor
Then go to Apps > Metacity and in Global Keybindings, pick one (say, 2) and double-click on it and enter <Control><Alt>Delete Then go to Keybinding Commands and find the corresponding command # (2, for this example) and double-click on it and enter gnome-system-monitor

Remember, this is assuming you're using Gnome.

Unfortunately Ubuntu hides/obfuscates/abstracts many configuration items from the user. Run gconf-editor from either a terminal or the run dialog and see if you get the editor referenced above. Follow the instructions made by the other posters and that should work. If gconf-editor is not installed, you may need to search for it using synaptic and install it.

Hi, I'm new user of Linux also, and I found easiest way to do what you wanted. Although u already succeeded, this may help some new guys.

easiest way to assign ctrl-alt-del to system monitor is to go
System/Preferences/Keyboard shortcuts
then you should delete shortcut for logout which is same,
and then add your own command. For name put 'System monitor' or whichever you like, for command use 'gnome-system-monitor', press Apply and then assign keyboard shortcut to that command.

thats about it
