Would avoid gtk3 entirely, but irritatingly I've yet to find useful alternatives to the remaining gtk/gnome apps that don't rely on it.

You have to create the ~/.config/gtk3.0/settings.ini
Example:
[Settings]
gtk-theme-name=Adwaita
gtk-icon-theme-name=Humanity
gtk-cursor-theme-name=Adwaita
gtk-fallback-icon-theme = gnome
gtk-cursor-theme-size=0
gtk-toolbar-style=GTK_TOOLBAR_BOTH
gtk-toolbar-icon-size=GTK_ICON_SIZE_LARGE_TOOLBAR
gtk-button-images=1
gtk-menu-images=1
gtk-enable-event-sounds=1
gtk-enable-input-feedback-sounds=1
gtk-xft-antialias=1
gtk-xft-hinting=1
gtk-xft-hintstyle="hintmedium"
gtk-xft-rgba="none"
