Have you taken a look at these 2?
- Red Hat Certified Engineer — RHCE
- Red Hat Certified Engineer (RHCE) Exam (EX300)

I would also advise to buy, beg for, borrow or steal M. Jang's RHCSA/RHCE Red Hat Linux Certification Study Guide which seems to be the de-facto standard for preparing for the exams.

If you have already passed the RHCSA test, the RHCE test is similar in format, only harder with much more of a time crunch.

Just practice the course objectives defined by redhat, make sure you know how to do them by heart and test them when you do them at home, in the exam I recommend not wasting time with testing, just install, configure properly and move on.(You'll be surprised how much time will fly)Its not hard at all, but its the time that gets you.
