GRUB fails to boot
I have recently followed the following guides:

After POST, GRUB loads but does nothing.

When I try to specify the kernel by hand with: "kernel /boot/vmlinuz root=/dev/sda5" (however I also tried different root options, like /dev/mapper/root and sda7) I get "Error 15: File not found"

sda1, sda2, sda3 are Windows/recovery partitions, sda4 is extended, sda5 is my root, sda6 is swap and sda7 is my root.

My /boot/grub/grub.conf is:

defaults 0
timeout 5

kernel /boot/vmlinuz root=/dev/mapper/root
initrd /boot/initramfs.cpio.gz

title=Windows NT
root (hd0,0)
chainloader +1

When you say

After POST, GRUB loads but does nothing.
what do you mean? Do you get a blank screen? Or does the menu appear, but if you try to boot any of the options, you're returned to the menu?

I also hope you mean, not the "mirrorlist" page you posted from the Gentoo handbook... I assume you followed all the instruction on that page to set up grub?

Looks like you have your system encrypted with dm-crypt/LUKS.

So try this one:

kernel /boot/vmlinuz cryptdevice=/dev/sdaX:root root=/dev/mapper/root
And add this line to the Linux section:

root (hd0,Y)
Where X is your root partition and Y your boot partition. I guess X=7 and Y=4.
