what does GNU stand for?
i look at definitions on the web and it says "GNU not unix"
it's using the term being defined in the definition so....what does it really mean?

Well you answered your own question already. ;) But here's some more info on the matter.

gnu is what is called a recursive acronym.

The meaning is right. GNU = GNU is Not Unix. Its a play on words that is very common in the opensource community e.g. PHP = PHP:Hypertext Preprocessor.
