I'm not sure if it has been mentioned before, but Assassins Creed 1 and 2 are fantastic, despite the Ubisoft online DRM stuff. The storylines are amazing and deep, the graphics are incredible, and moreover the gameplay is intriguing and endless.
NBA 2K11 is really fun too. It is by far the best sports game. I've played them since 2K7 (was ranked 25 in the world in 2K7 on Xbox Live ). The online is intense. TeamUp is loads of fun.
And that brings me to my main recommendation, Call of Duty 4, WaW, MW2, and BO. Pretty much every game since 4. Offline play is pretty good in all of them. But it's online where it is AMAZING. Ohmagosh, it's just ridiculously fun. I used to play competitively, and my friend and I beat the #1 Dubs clan in the world. We were pretty darn good. I can't even play Call of Duty 4 anymore. I'd still be a beast at it, that isn't the problem, but all the nostalgia hits me so hard I shed a tear. Good times, good times. Yes, I do need to get out more.
I guarantee someone is going to snicker at me for this, but the Pokemon games are awesome. Yes, I said it. Just don't get the novelty/cheap spinoffs. Keep it where it's fun. Red, Blue, Yellow, Sapphire, Ruby, Emerald, SoulSilver, Platinum, Crystal, Diamond, Pearl... Get those ones. They will keep you entertained for hours.
Pokerstars is good if you like real money Texas Hold 'Em. Hold 'Em is awesome, and so is Pokerstars.
Annnnndddddd what do you mean games for playing cards?! OHMAGOSH. There are thousands. Solitare by yourself (Klondike and Canfield are good), some Gin Rummy for two, Crazy Eights, poker, bridge... Not to mention it's fun to learn some fans and flourishes and practice card magic. I use Bicycle for magic, fans and flourishes and I use Copag for all games. Ellusionist.com has some dang nice cards too, even better than regular Bikes but I've been too lazy and strapped to order any of them. The Shawdow Masters and Black Arcane deck are Sick though. (Sick, as in totally awesome, cool, incredible, etc..)
Woah, woah, woah... I'm gonna stop myself there. Heh, boy I could on about games n' stuff forever. I love 'em. It depends on what you like though Tex. I see you like racing games, and the best racing game I've ever played is Need for Speed: Carbon (Protip: Corvette with maxed acceleration = best car in game. If you play online and someone has one, you always get beat. Always. Trust me. Bars lie... )

I stopped enjoying "war games" after the original CoD. Had already played Medal of Honor and CoD was like a beter graphics version of that...but as more of them came out I just got tired of the "shoot everything you see to win the game" style, especially since those games really didn't have a very gripping story line (if they even had one at all). Much prefer Fallout for a shooter/RPG hybrid that has a good story and is really immersive (although some of the things in Fallout 3 didn't make much sense).
Another reason I don't like the CoD games online is because even on certain team-oriented game modes like search and destroy there are lots of folks that don't actually give a damn about cooperating to win the game, they're more interested in being the uber-1337 asshat who gets the highest stats for kills/bomb-planting/bomb-defusing.
In Team Fortress on the other hand if you don't cooperate as a team you're pretty much assured to fail, no matter how many "frags" you rack up during the game. Oh and it's a ton of fun too
I like most games and game types, but there are some things that bother me:
Propaganda - I know it's in everything, but I try to stay away from it, because it does anger me. The point of a game is to get away from all this BS, why would I want that BS in my video game ? One recent example that comes to mind is the pro-war propaganda in say Valkyria Chronicle. Plenty of propaganda in the recent C&C series, many Capcom games, etc.
Graphics but no gameplay - self explanatory, most recent games suffer from this.
Multiplayer - it seems only jack**** are online these days, so I much prefer single player. I want to feel good and relaxed while playing a game, no n00b, or cheater, or you're botting. I'm sick of that.
EA and Ubisoft - DRM and ethics comes to mind, I prefer to stay away from these two.
I used to play Need for Speed, and I must say that the original versions on the PS and even Xbox were great. But then they changed to the gangsta style, and things went downhill, as did EA.
I may try Civ 5, I hope it's as good as Civ 2 and 1. I played 3, but did not like it at all, so I stopped buying them, and there was the propaganda add in 4 ...
Think of all those c0rp0r@t3 cr00k5 which use computers to harm innocent ppl like regular employees and co-workers... now you can unleash an informatic "Pearl Harbor" against their data and application layers...
So as to make them pay so dearly for all their crimes, that they will think again before doing the same again, and lose all taste for using computers to steal and harm defenselss citizens with their cr00ked management goals...
the hardest thing you will ever do on a computer is fly a simulated radio controlled helicopter
this thing is so hard that it wears your brain out if you run it too long with out a break it gets harder and your performance deteriorates
you need a 4 axis joy stick for it but there cheap $18.00 to $32.00

it's not really a game but a training tool no combat no multiplayer simple graphics as close as it gets to a score is a log of what you have been doing
I have seen lots of reports that after getting good on this sim people have been able to hover
on there first attempt with the real thing

cant think of any commercial games but openbve is an open source train simulator similar to microsoft train simulator and bve rail sim and it has a linux native version
Well I got Civ V. I don't really like it so far. There's no cottages or towns, no unit stacks, and no specialists. I think I could get over that and have some fun playing it but it's just way too sluggish. I can't turn off combat animations. I just want to click attack and instantly see the results. And when I cycle through units there's a big pause after each command before it goes to the next unit. And when I hover over a unit I can count to two before the window with the HP info is displayed. It takes forever to get through turns and it's really ruining the game for me.
EDIT:
Oh yeah and you have to register through Steam. I think there's a way to play offline after that but even then I think you still have to launch through the Steam software? I don't like that. But it does all work through Wine.

I recently enjoyed Darksiders on my PS3. It is often compared to Zelda, but it is a bit easier than that classic IMHO. Even on the highest difficulty level I found the challenge level quite manageable. None of the puzzles are too annoying, although one of the bosses was agonizingly so.
Overall a very good game, and it was well worth my time to complete on each difficulty level. If you try getting all the trophies though at least two of them will give you fits.
