Games don't need a particularly good operating system to run. Similar to having super quality sound is not entirely necessary to enjoy music, or a hd-tv to enjoy views.
Also stablility is not really the chief reason for switching to linux. The philosophy of open source, and revolution and all thats stuff is driving force of it popularity.
If San Andreas is just as big, and F.E.A.R still has just the same motion blur, theres no compelling reason for users or developers to switch away from the more popular platform.
I don't think you're really appreciating linux or windows, or operating systems as a whole here. Even windows is better than no OS at all. In fact windows xp is quite usable. It has a fast, fairly intuitive gui. It does'nt crash every 10 minutes anymore. And besides the whole popularity thing, directx is valuable asset to game developers. Windows is by no means a push over.
