I'd like to forego Xfce's "xdg-compliant" menu and use an iconless, easily customizable, menu instead. I've checked into ratmenu and fluxmenu, but it seems like each employ emnu entries which fire a command line expecting their respective wm (e.g. fluxmenu --} fluxwm) to serve as the handler. Thanks, in advance, if you can suggest a workaround.

I have no Xfce experience and don't know how to customize the Xfce menu, sorry.

Yes I think some of the classic Gnome is better . No idea but look like Gnome 3 and unity looks very close to being the same.

They both have this crude looking dock on the left .

This unity looks like a crude hybrid iPhone and OS X style from 2003.

No idea why they have gone this road at all.

Anybody tried out Ubuntu's HUD? I think it's something like a Tilda terminal always open on your desktop, although I haven't actually seen as much as a screenshot, and I'm pretty sure it won't run on my system at all.
