Hi Mathew,
On your GRUB loader screen, type
e.
In the sub-menu, choose the kernel option and type
e again.
append
single keyword at the end of kernel statement (after
quiet).
then press enter and type
b to boot the system in single user mode.
when u reach the prompt. type
passwd root to change the password of root.
