I've recently installed linux on my PC with the graphical interfaces installed but I want to run it as a server but still be able to use the graphical interface sometimes.
When I run it as a server, to save memory, I want to be able to boot it up into text mode or a very basic graphical terminal interface (it would be useful to have access to more than one terminal) except I have no idea how to do this.
Can anyone help me?

remove kdm /gdm /xdm from all of the /etc/rc#.d directories, and or from rc3.d at least, and then set your default runlevel to 3 by modifying the initdefault line in /etc/inittab
and if you want to switch to different terminals in the text mode , press CTRL+ALT F1,F2,F3,....F6 and CTRL+ALT F7 will bring you back to the graphical interface
if you want a lighter graphical interface then try fluxbox
