If your using a graphical login such as xdm, gdm or kdm There should be a menu alowing you to change which one of the enviroments you want. Usually the option is called session type.
under a console, 'switchdesk kde' will set your default as kde, i believe you can tell it any of the others as well, but i have only used it for getting it to be KDE as default...
