Boot your VM, at the GRUB boot prompt select your kernel, press "e" to edit, add a "1" at the end of the line that starts with the word "kernel". Now boot that kernel and you will be in runlevel 1 which is not automagically protected on regular installs. You'll end up at a prompt after which you can type "passwd" to change the root password or for example "passwd tagwar" to set a password for existing user named "tagwar". Type "telinit 3" will make the multi-user and network stuff come up after which you can log in or type "telinit 5" instead to have the previous plus the graphical shell stuff.

You can't save it until you can access the image properly (and it shouldn't be necessary unless you want to add a separate GRUB entry for it) and the kernel line requires spaces between items.
