standard reference documents will still apply, for example http://tldp.org/HOWTO/DHCP/ for a full guide, and the config files themselves and manpages are good.

there is a dhcpd package available via yum.

Even though it runs as a daemon the package goes by dhcp. The only thing I recall needing tweaked after install is /etc/dhcpd.conf. As AcidKewpie suggested, TLDP and the man pages should get you through configuration.
