Try right clicking the file, then choose properties look for where it says Type: blah blah blah, there should be an icon at the end of that line that you can click on to take you to a list of alternatives.

You can also do this if you are using KDE via the kcontrol or KDE Control Centre. Go to KDE Components--> File associations, type in the extention of the file you want to change in the Find filename pattern box, click on the filename then look to your right and you will see the icon associated with that file, click the icon and you will be taken to the location of all your alternatives.

Hmmm not sure with Gnome as I don't use gnome. But in KDE you'd just open K Menu->Control Center->KDE Components->File Associations. Check if Gnome has something similar to this. I'm installing Gnome right now just to have it for shits and giggles and if you figure it out before I do let me know.
In the meantime see if this link helps out -> http://ubuntuforums.org/archive/index.php/t-302549.html
