Changing startup services?

I'm aware there's a few ways to do this, but its been a while, and I'm dammed if I can remember how I did it.

Basically I want to disable those services that I never use (such as cups and sendmail).

If anyone can jog my memory on this, please do so.

Fedora Core 2, 2.6.8-1.521 kernel, all patches applied.
