What's the single best beginner's Debian book?

"Best" is probably subjective, but maybe take a look at the Debian Administrator's Handbook: http://debian-handbook.info/browse/stable/

Or install in a VM and experiment. When you break something, you'll learn how to fix it. The VM will allow you to take snapshots, so if you break something beyond repair, you can roll back to a working state and try again.
