If my CPU supports Hyper-threading would two CPUs been shown here? I ask as this is a work PC and I don't have access to the BIOS (yet) to check the FSB and therefore discover if HT is supported.

Since you are using a SMP kernel, if your system is HT /proc/cpuinfo should show you two.
