How to setup own apt archive


I customized a Knoppix based Live CD to include some of the softwares of my need.
Basically Knoppix is based on Unstable/testing version of Debian.
I want to remove all the testing packages and install debian stable packages.For this I think it is enough to setup my own apt archive(I think i am correct??) by editing /et/apt/sources.list and /var/lib/apt/lists .Basically my qn if i edit those above mentioned files and remove all the Unstable And Testing mirrors will I get a stable Debian.??
Then one more doubt I want to remove one package with all the files related with it.How to do this with apt or dpkg.
Plz clear me.

http://www.debian.org/mirror/ftpmirror.en.html for a mirror how-to. However it sounds like you really want to downgrade to stable only, correct? Answer this and we'll go from there.

Yes.I need only Stable packages and remove testing and unstable packages.

Then you don't want to setup a mirror. You want to edit /etc/apt/sources.list to point to stable only and also use apt-pinning to get back to a clean stable. Frankly, I find it easier to save files I want to somewhere else and use a netinst iso to install Woody from scratch.

Yes.I want to edit my /etc/apt/sources.list and want it should point to only stable packages.My qn is is there any other files to edit apart from sources.list.If yes what are they?.Plz explain it in detail. .
I cud not understand the last few lines in ur reply(QUoted).Plz clarify it also

if you want to keep your /home/ files, tar them up and move them to another box.

edit /etc/apt/sources.list

see the post in the forums about apt-pinning.
