Try running "Main Menu" (I think the app is "alacarte").
You can then navigate to Internet, select "Icedove", and click "Properties".
Left click on the icon (top left of the properties window), and you can select an icon to use.
I probably should also mention, there is an "Icon" line in the file at;
/usr/share/applications/icedove.desktop
There are also multiple "icedove.png" files (and icedove.svg) in subfolders of "/usr/share/icons/hicolor/"
Make backups!
My scripting abilities are rusty and elementary at best, so I will have to stick with the everyday tasks of desktop navigation and selection, although I do appreciate the suggestion.
Problem solved. As I recall, the change didn't take effect until I restarted. Could have simply relogged back in, but a restart was necessary for another purpose.

I find that replacing the icedove png xpm and svg files in /usr/share and replacing the icon in the .desktop file only fixes the menu. The icon displayed in the gnome window list (task bar) is still the icedove one. Since i can't find any more icon files, I'm thinking the icon must be embedded in one of the compiled objects. Maybe there's a config option in thunderbird to override that icon without recompiling. Does anyone know?

I don't know if this helps you, but when I was concerned about this particular issue, I downloaded an image for the icon from the internet. There were not any images stored natively that I preferred or that I wanted to use.
