SELinux would be awesome if it didn't have such a propensity for getting in the way. AppArmor it is. :-p

No single one is "Best"; they all work
 
OSSEC, Tripwire, Bastille, Rootkithunter, SELinux, and others that I didn't name, are all good to deploy. Pick any six or eight. The more diverse your defenses, the better.
