And the winner is... itsy bitsy spider crawled up the water spout...
Wait..
istsy bitsy jitsi on kamailio is way more secure than Skype, and if you're the provider you won't have to bow down and subject your customers to unmentionable forms of deviant toture like Skype did when they provided the Chinese government with the secure skype chatlogs of their users!

A little off topic: Ooma VoIP uses open source and it is a great service that is constantly improving and adding features.

I always use Skype. Mainly because my 80+ year old auntie knows how to use it and I can keep up with all the family gossip in Scotland!

Teamspeak?
Does teamspeak fit into this category? It lets several people talk to each other over IP

Please add:
P2P calls (literally IP to IP): IHU (I once made a call which was lasted for over 10 hours!)
Jingle/XMPP: Coccinella, Gajim, Psi, Psi+, PsiMedia (VoIP plugin for Psi)
* In the future Psi will use Farstream (formerly Farsight) just like Gajim.
SIP: SFLphone
All the Skype users are SELL OUTS (aaaawwwwaaaaaawwwawawa LETS START A FLAME WAR!!!) and now you are more SELL OUTS because it is now controlled by M$!!! :-P

SFLphone has been added (mainly to ensure it is included next year). It doesn't appear that IHU has had a new release since 2008.
